it depends on the sentence. you're is from Subject+to be+(so it will followed by verb-ing/adjective)
your should be followed by adverb

"Your" will always precede a noun.
Your hamburger
Your summer break
Your mom
Your sense of humor
You're will be preceded by a number of different things. and I think these will always be part of the predicate.
-Noun phrase
You're my Mom
-Adjective
You're tall
-adverb
you're really tall
-verb
you're going to the store
-Proper noun [specific person place or thing]
You're Mr Smith, aren't you?
-noun [following "a" (singular)] あなた
You're a boy!
-noun (plural) あなたら
you're boys!
my break is over for now. I'll think about this some more.
