I don't understand "What are you talking about?" Why the "about" goes to the final of the sentence? Is the same ask: "about what are you talking?"

What are you talking about tiene más fuerza como expresión, es el equivalente a "pero de que estas hablando?!"
"Pero que estas hablando/diciendo" seria solamente "What are you talking/saying?, pero cuando usas "what are you talking about?" es más como "de que estas hablando?".
Si dices "about what are you talking" es como tomar la conversación de una pausa, como cuando decimos "sobre lo que estabas diciendo/hablando..." y continuas la conversacion.
