ero è l'imperfetto e indica un'azione avvenuta in un passato recente: due ore fa ero assetato e ho bevuto. E' spesso seguito da un aggettivo (assetato) che prende il nome di predicato nominale..
sono stato lo usi nelle frasi più complesse per indicare un'azione avvenuta in un passato non molto lontano che ha ripercussioni (nella frase principale) nel presente es: Sono stato male( subordinata) per cui ora prendo una medicina ( principale)
stavo lo usi come ausiliare per un' azione continuativa avvenuta nel passato( I was doing/...) es : Mentre stavo facendo i compiti quando suonò il campanello ( While I was doing my homeworks, the bell rang)

In alcune zone d'Italia anche "Oggi stavo al parco"
Di solito il verbo stare si usa nelle costruzioni
Stare per + indicativo
Stare + gerundio
"Sto per uscire proprio ora!"
"Stava mangiando, quando..."
