Beat can be for a wide range of things. 'He beat me to the park' (meaning he was faster to reach the park) 'my Father beat me for getting bad grades' 'I beat him at the game' (meaning I won him) but for defeat, it is mostly just for winning or losing. But besides that, they are quite similar. Please correct me if I'm wrong.

I've managed to beat the boss = I have managed to defeat the boss (when talking about games for example) or
Simon always beats me at tennis= Simon always defeats me at tennis.
for other cases :
think at defeat being similar to death or something permanent. it's much stronger and more powerful than beat.
as analogy think at :
you've won the fight (beat) but not the war (defeat)
as
You have beaten me today but not yet defeated.
