How do you know which pronunciation of r to use? English pronunciation is in brackets[ ], that isn't pinyin.
人 rén, [rlén]
热 rè, [zhè]
why does rén sound like [r l é n, English letters] and rè sound like [z h è]. How will I know which to use with other words that start with r?

It's not about the pronunciation of the "r" but about "en" and "e". The sound of the "r" doesn't change.

I do not understand what you mean. én instead of è, changes how r sounds?

No I mean you should focus on "e" and "en" and not on "r" since it's them who makes you think the "r" has another pronunciation.
A pinyin has an initial sound and a final one. For exemple :
Zhe = zh + e
Zhen = zh + en
Each part has a fixed sound, and it never changes. The pinyin sounds are also limited for example something like : roang doesn't exist
So when you see "ren" it will always have the same pronunciation, as well has "re". So the "en" and "e" keep their sounds, and it can be "r" or "ch", "sh" before it wont change
Then you can have other sounds with "r" like rang, reng, ri, etc... But the "r" sound is always the same, it's the part next to eat who helps you to figure out how to pronounce the pinyin in question.
