If you say 'Jij bént zo', you are saying 'You are like that', 'That's the kind of person you are'.
But if you say 'Jij bent zo', you need to add an adjective, or else it is meaningless. You might say 'Jij bent zó aardig!'.
'Zo' can also mean 'in a moment', like @BarbaraS says, that is a different meaning of 'zo'.

This sentence is incomplete and should be followed by an adjective.
Like this:
* Jij bent zo dik. (fat)
