All of them are acceptable, actually!
An refers to a particular guitar, and "playing electric guitar" focuses on the activity, not the instrument, but they're interchangeable.

@junwei 'an' electric guitar is any random guitar. 'The' is a specific one you have talked about already.
so, Dylan has several electric guitars, including a Gibson, an antique Stratocaster, and a 12-string rosewood made in Wales.
