"the" is identifying what you're referring to
"their" is showing possession
"The women are drinking their water."
"Their hair is blonde."
"The blonde woman is my sister."

the you put infront of a word to show that it's that specific thing you're talking about. For example "The dog is beautiful" then you're not talking about any dog you're talking about a special one.
Their is used to show that something belongs to some people, it's like "my" but in third person plural. For example:
"it's not my cat it's their cat, the two ladies you see comming there.
"the teacher came into the classroom and all the students dropped their books"
