could someone please help me understand the phrase 'no niin'? i've had a lot of trouble understanding the different meanings and uses even though my finnish friends have tried explaining several times =(

This is probably one of the hardest Finnish phrases to translate. It depends highly on the context and/or intonation.
Basically "no niin" means "well then", which is one of its meanings.
I usually use it when someone tells me something I don't quite know how to respond to, but I have to say something. :D Then it's kinda like "okay" but can be understood as being empathic on the subject.

You can also add "hei" to the lovely equation:
"Noniin hei" which is kinda like "Okay then, let's get started"
and
"Hei noniin" which is like "come on guys, could you at least try" :D

oh my god you can literally say anything with that phrase! does it make any difference if I write it 'no niin' rather than 'noniin' or is it the same?

It's not formal Finnish, so you can write it as you want. Both noniin or no niin are correct imo but I'd probably write "noniin" as that's more like it's said and in colloquial written Finnish we often like to write those small words together ("eikse" instead of "eiks se" etc.)

the finns I know tell me I'm crazy for learning, specially on my own. I actually think I'm not doing thaaat bad. Finnish is actually pretty similar to Spanish in many things!
