You find a way to hold them, that works for you. In Japan you will probably be excused because you are a foreigner and you can always explain if you feel the need to. Hope this helps :)

Don't worry it's okay.
When using chopsticks, move only the index finger and the middle finger. And just add thumb to chopsticks.
The thumb puts no force and hardly moves.
Also, at a Japanese shops can order forks when ordering. good luck :)
