What did you study means "what did you study at a certain time period" or "what did you study in your most recent study session"
What have you studied means "what have you studied in a longer period of time"
What did you study last night? I studied the words "did" and "have".
What have you studied since I last saw you? I have studied lots of things.

When someone says 'What did you study' they are referring to a specific time and place
But what have you studied could be much more general, it's meaning could be 'What have you studied in your entire life?' but it could also be a specific time and place
