The difference is intuitive. Theyâre sometimes interchangeable, but at other times theyâre not. You might say a mystery is intriguing/fascinating/interesting, but you wouldnât exchange âI have an interesting relationship with my fatherâ with âI have an intriguing relationship with my fatherâ. Typically, if it is something that involves yourself or something youâre familiar with, you wouldnât use intriguing/fascinating. Something about it feels slightly strange, or even egotistical. Mostly because theyâre somewhat stronger adjectives than âinterestingâ. The other two are used when expressing an opinion, usually.
Another difference is that you can say something is slightly intriguing/interesting, because itâs not that cool or important, but you canât say something is âslightly fascinatingâ. âFascinatingâ is something that really catches your attention and holds it completely. A smile from a stranger may be intriguing, and an unusually-patterned tile floor may be interesting, but an unsolvable crime is fascinating.

They are "synonyms" so they mean pretty much the same thing. Although, I believe intriguing and fascinating show more curiousity than "interesting".
