Both are equally okay for material or non-material things. They are 100% identical in meaning, but perhaps "accumulate" sounds more formal.

"build up" can have many meanings. But first, let's define accumulate: which is to gather or pile up.
When you want to use "build up" like gathering up, you usually mean to gradually accumulate or acquire.
Build up can also mean to literally build, as in a structure or gain muscle mass by working out.
You can also use "build up" to mean an accumulation (not as a verb, but as a noun): The build up of stress at work caused her to finally quit.
